Chef Mike's Tailgate Talk

It is here, the big day. Let's talk about food. Now most of the country will be watching the best two teams in the league play on the 26th of January. Did you know that that is not even the most important part of the day? Unless your favorite team is playing the food you will eat is the centerpiece of the day.

Some of the favorite foods for the day are Wings, hoagies, hot dogs, chips and dips.

Everybody has a favorite place to get wings but if you want to make your own here is a super hot recipe for you if you are daring.

Sprinkle cayenne pepper onto your wings before you bake them in the oven. Don't be shy throw that cayenne pepper on those wings. Now while the wings are in the oven place 1 can of marinated jalapeno peppers and the juice their in into a blender and two tablespoons of cayenne pepper, one tablespoon of crushed red peppers, one half teaspoon of salt, ¼ cup of white wine vinegar and ¼ cup of Durkee hot sauce. Now there are two things you can do at this point. Add some habanera peppers to the blender to make the heat come alive even more or leave it alone. Blend all ingredients till they become almost a paste like consistency. When the wings are done take a pastry brush and dab the hot sauce all over the wings then place back in the oven for a few minuets. This will help activate the peppers so you can get the full flavor of the sauce.

BBQ ribs are pretty simple in that you should use the BBQ sauce that you think tastes the best. The trick to ribs is that you slow cook them for a very long time. You should be able to pull the meat off the bone with your fingers when they are done.

Hoagies are better if you buy them that day. Make sure you place you order a head of time. There might be a crowd picking up on that day.

Don't put any food into a warmer that is going to get soggy. French fries and items like that are just going to get thrown out at the end.

Crock-pots are a huge help on super Sunday. You can use them for stews, meatballs, soups and sausage and just about any thing else. Items in crock-pots are one of the best choices for the Super bowl. Remember super Sunday is about convenience.

The best advice I can give you about the Super bowl is keep it simple, eat before the game and stick to pretzels and chips during the game. You don't want to be bothered with anything else that day.

For those that drink during the game (HA, HA) here is a drink that I think you will like.

½ oz of rum
½ oz of vodka
½ oz of tequila
½ oz of blue Curacao
3 oz of O.J.
A splash of sour mix
Mix well and pour over ice
