In the tradition of the most sacred holiday
to all Irish people everywhere I give you Guinness Beef
stew. It is a simple recipe so Irish people including
myself can make it on St. Patrick’s Day. Be warned though,
for every step you take on this journey to make this
recipe you must drink one pint of Guinness. I will give
you a hint to a good stew and that is, it’s all in the
timing.
Ingredients:
5 lbs potatoes
5 lbs of beef cubes
2 lbs of carrots
2 pints of Guinness (these are for the stew)
1½ cups of flour
¼ lb of butter
Salt and pepper to taste
2 qts of beef stock
Make sure the potatoes and the beef are
one-inch cubes this will help in the cooking. The carrots
should be close to the size of the beef but it won’t
be necessary.
Take the butter and put it in a large
pot on a low heat. Place the beef in with the butter
allowing the beef to start rendering (slow cook).
When the beef starts to get brown put
the potatoes in and allow the potatoes to start cooking.
After about 10 to15 minuets place the carrots in and
let cook for about 10 minuets.
Once all the ingredients have started
to cook add the flour and stir all the ingredients well.
This will make a roux out of all the juices from the
beef and the butter. Let the roux cook on a low flame
for 3 to 5 minuets. By doing this the flour taste will
cook away.
Then add the Guinness. Mix the beer well
with the other ingredients and then add the beef stock.
Put a lid on the pot and turn the heat up to medium.
Stir occasionally for fifteen minuets then turn the
flame down to low and let the stew cook for 1½ hours.
When there is a half hour left taste the stew and adjust
the flavor with salt and pepper.
You want the beef and other ingredients
to be soft to the touch but not falling apart. Every
stove has different heat levels so you may have to adjust
the cooking time a little.
By now you should have had several Guinness
and this stew is going to fill your stomach so you can
get a good night sleep.
Remember true Irish celebrate the heritage
year round. Everybody else wants to be Irish one day
a year.
