Chef Mike's Tailgate Talk

Lee Roy Selmon's is a tribute to the southern graciousness and the competitive sporting life instilled in the Selmon family.

The first Tampa Bay Buccaneer enshrined in the NFL Hall of Fame, Lee Roy grew up on a farm in Eufaula, Oklahoma. Here, Lee Roy and his eight older siblings learned to harvest the land. It was also here that his parents Jessie and Lucious planted the seeds of love, faith and hard work in their children.

They were rewarded with Jessie's succulent southern specialties: knee bucklin' favorites like Mama Selmon's meatloaf, crawfish-stuffed catfish and rib-grabbin' barbecue, alongside steaming platters of fresh vegetables from their farm. Fortified by Jessie's hearty fare, Lucious Jr., Dewey and Lee Roy grew up to become legendary, powerful forces in football.

Conversations around the dinner table were as memorable as the meals themselves: Lee Roy going on a diet at the age of seven - and lasting about ten minutes; the children sharing a ride on their horse Roxie three at a time; the milk fights in the barn and, of course, going off to play some pretty fair football at the University of Oklahoma.

Cooking Tips from Mama Selmon

SELMON 7-UP CAKE
3 sticks oleo/butter
5 eggs
2 tablespoons lemon extract
3 cups sugar
3 cups flour
3/4 cup 7UP

Cream butter and sugar, add eggs and extract. Beat flour and 7-UP alternately. Be sure to beat cake mix 20 minutes. Pour in floured and greased pan. Bake at 325 degrees for 90 minutes or until done.


BIG BEEF CASSEROLE
1 lb. Ground beef
1 medium onion, diced
1 can Cream of Chicken Soup
1 lb. Frozen Tater Tots

Crumble up the raw ground beef in bottom of 9X9 pan, and spread diced onion with it. Then spread soup over that and cover with tater tots. Bake at 350 degrees for 1 hour.


SELMON FAMILY MEATLOAF
Ground Beef
Ground Pork
Minced Onion
Minded Bell Pepper
Ritz Crackers
1 Egg
Salt
Pepper
Tomato sauce
Barbecue sauce

Mix above ingredients thoroughly. Place loaf in ungreased loaf pan. Cover with barbeque sauce and bake at 375 degrees.
