Editors Note: In May of this year Chef
Mike put together a one-year quiz of his articles. While
we appreciated the responses nobody seemed to get it
all quite right. Since May till now Football and Hockey
have both started. Before Basketball starts here are
the answers.

T, T, T, F. Let me explain.
True or False.
- MSG was discovered in Japan in the
1920's. True, Professor Kikunae Ikeda of the
Tokyo Imperial University started fooling around with
seaweed in 1907. That led to MSG used sometime later
in the 1920’s as a food enhancer.
- Sweetbreads are Christmas bread served
at dinner. False, they are an odd name for
glands from the heart of an animal. I have no idea
how that name came around.
- Pimento's can be found at the bottom
of a martini glass. True, really where else
would you look for them?
- I did not like the $400 a plate dinner.
False, Chef Mike found it amusing. For that
amount of money one should smile.
- The eggs in ladyfingers don't need
to be separated. False, the eggs need to be
separated. Unknown if the person who penned the name
"ladyfingers" also came up with the name "sweetbreads".
- White stocks can be made from beef
bones. True, just don’t brown the meat first.
- A garnish on the plate is not meant
to enhance the plate and meal. False, it is
all about the looks.
- Everybody wants to be Irish once a
year. True, according to the Irish.
- Consommé's are broth’s that have not
been clarified. False, they are "specially
clarified".
- You cannot use rice to thicken soups.
False, rice is fine.
- When we went to the ball we had clear
directions. False, Chef Mike and company was
mostly lost.
- My super bowl hot sauce has Durkee
hot sauce in it. True, Durkee is a must in
the sauce and will move your taste buds.
- Brown Betty is made from pears. False,
you need tart apples.
- The filet at the ball was cooked to
a perfect medium. True, at $400.00 a plate
is should be.
- Egg whites and vegetables create a
raft. True, they had to call it something.
Bonus Questions
- There are two types of limes. True,
that being Persian like in drink and Key lime like
in pie.
- Au Gratin is a type of apple pie.
False, it is any food topped with breadcrumbs
broiled and browned to a crisp with butter or grated
cheese.
