Letters From The Grandstand

This is something my grandmother made when I was young. I always liked it. For years my Mom would make it for my birthday. It is not the easiest thing to put together now, but it is worth it. No idea how the city part of the name came about. I think it was meant as a spoof. My family were farmers. Let me get started.

City Chicken Legs

1 lb. veal steak and 1 lb. pork steak

Cut into 1 x 1 1/2 inch pieces; sprinkle with salt and pepper. Arrange veal and pork pieces alternately on 6 wood skewers. Roll each one in flour, then in beaten egg diluted with a little water, then in bread crumbs. Brown meat well.

Add a little water or meat stock. Cover and bake in oven at 325 degrees until tender.

These "Legs" (veal and pork on skewers) can often be ordered from a butcher. They are ready to be rolled and baked. It is a good company meal or picnic treat.
